I’ve been “mostly” Gluten Free by necessity – gluten causes multiple mood, skin and digestive issues for me – and the one thing I miss is a good sandwich! These Coconut Wrap Sandwiches really satisfy my cravings!
Last Tuesday my friend Jane and I were at Herban Market in Franklin, TN. It’s a great place with high quality olive oil that bubbles with antioxidant and polyphenol goodness in your throat. They also have vats of yummy infused Balsalmic vinegars, some grocery items and a juice bar and deli/cafe.
Since it was Tuesday, a “feasting day” on our Be Nourished 4 Life Intermittent Fast, we did the famous Herban Market “olive oil & vinegar” tasting and Jane chose a yummy lemon infused olive oil paired with a fabulous pomegranate infused white balsalmic vinegar. Then we were hungry and decided to try the Coconut Wrap Sandwiches.
We ordered a chicken salad “Sunfood” coconut wrap and it was divine! Fresh tasting salad with herbs, alfalfa sprouts and cucumber. I found my new sandwich love; and you know what we didn’t even notice a coconut flavor. Amazing!
You can make them at home!
I purchased a package of “Sunfood” plain coconut wraps to try my hand at home. You can use any healthy filling you like; I moistened my finger and rubbed a little water on the ends so they would hold together. I found that the textured side of the wrap did not stick as well as the smooth side. Next time I’ll place the smooth side on the outside and the textured side on the filling side.

The wraps I used are made by Sunfood. Sprouts Market does not seem to carry any type of coconut wrap, however, you can buy them on line.

Coconut Wrap Sandwiches
Ingredients
- 1 wrap Coconut Wrap
- 1/2 cup leafy greens and veggies
- 1 Tablespoon favorite organic dressing
- 4 slices Your choice of thinly sliced raw veggies such as cucumbers
- 2 slices perfectly ripe avocados (soft to touch like a ripe peach
Instructions
- Lay the coconut wrap on a flat surface
- Top with your favorite toppings. Can be vegan or about 2 oz of high quality animal protein. I used wild caught Tuna.
- Add thinly sliced or shredded veggies and 1 Tablespon of your favorite organic salad dressing.
- Roll and Enjoy!
