Rice Paper Wraps

Like a salad –to-go or serve as an appetizer with an Asian meal. Our friend Vui from Whole Foods in Franklin, TN taught us this favorite food of her native home in South Vietnam. Vui said when she was growing up the teenagers would sit around and munch on these in the same way American teens munch on chips and candy.
Imagine your teenagers sitting around a bowl of filtered water, piles of fresh herbs and veggies, making rice paper wraps….try it, they may love it!

Serve with Thai Golden Dragon Sauce for a fabulous Vietnamese or Thai flavor

Rice Paper Wraps

Ingredients

  • Rice Paper from Asian section of grocery (these cannot be cooked must use raw like this) Variety of your favorite fresh herbs
  • Fresh baby spinach or spring mix
  • Your choice of thinly sliced raw veggies such as cucumbers avocado, carrots, green
  • Onions
  • Nut pate or hummus

Instructions

  • Dip rice paper into bowl of filtered water for 1-3 seconds
  • Put on a cutting board, careful not to wrinkle.
  • Put some spinach or spring mix and veggies on the top of the rice paper.
  • Top it with some fresh herbs.
  • Roll away from you like a burrito, folding in the edges.
  • Cut in half to serve.

• 1 Rice Paper Wrap
• 5 Baby Spinach leaves
• 1 Sprig Fresh Basil
• 1 Sprig Fresh Dill
• 1 Sprig Fresh Mint
• 1 teaspoon Grated Carrots
• 1 teaspoon Grated Zucchini
• 1 thin Avocado slice
