Rice Paper Wraps

Ingredients
Rice Paper from Asian section of grocery (these cannot be cooked
must use raw like this) Variety of your favorite fresh herbs
Fresh baby spinach or spring mix
Your choice of thinly sliced raw veggies such as cucumbers
avocado, carrots, green
Onions
Nut pate or hummus
Instructions
Dip rice paper into bowl of filtered water for 1-3 seconds
Put on a cutting board, careful not to wrinkle.
Put some spinach or spring mix and veggies on the top of the rice paper.
Top it with some fresh herbs.
Roll away from you like a burrito, folding in the edges.
Cut in half to serve.

• 1 Rice Paper Wrap
• 5 Baby Spinach leaves
• 1 Sprig Fresh Basil
• 1 Sprig Fresh Dill
• 1 Sprig Fresh Mint
• 1 teaspoon Grated Carrots
• 1 teaspoon Grated Zucchini
• 1 thin Avocado slice
