Zesty Lime Dressing and Marinade

Zesty Lime Dressing and Marinade satisfies my recent cravings for Spicy food, without burning up my mouth.  I’ve noticed since I’ve had an extreme amount of stress events the past few years I’ve been more tolerant of and craved more spicy foods … foods I would not have chosen in the past, and there is a reason for this!

When you have tons of stress and your body is on alert all the time it begins to crave stimulating foods.  Typically these are caffeine, salt, fatty foods (like chips) and protein.  Interestingly enough, you may also find you suddenly have a tolerance for spicy foods, like I have, because they too are stimulants!

Speaking of craving salty fatty foods, rather than reaching for a Big Mac, Shake and Fries, the beneficial fats and natural sodium from the lime will actually satisfy that craving; as long as you aren’t sitting next to someone inhaling their fast food.  :0)

Limes are full of beneficial natural sodium, your body needs LOTS of real-food sodium when you are under stress.

Zesty Lime Dressing & Marinade

I usually have this recipe in the fridge, ready for a salad or marinade.  It’s great for taco salad…be sure and add some crunchy angel hair cabbage.  Toss your greens and veggies in the Zesty Lime Dressing & Marinade and they top with a scoop or two of refried beans, a dollop of guacamole and a spoonful of salsa…you have a nutrient dense vegan meal!

You could also marinate beans, peppers, onions in this Zesty Lime Dressing & Marinade.  Store in the fridge.  When you are hungry, plop a cup of your marinated beans on a handful of greens.  Hmmm….I might have to try that!

Recipe is adapted from The Pioneer Woman Fajita Marinade.  I’ve upgraded some of the ingredients to make them healthier and absolutely love this as a salad dressing.

Zesty Lime Dressing/Marinade

Slightly spicy salad dressing and marinade. A nice change from ranch or salsa on a taco salad. Wonderful as a marinade for grilled chicken or steak. The flavors blend well so it's not overpowered by any one flavor. One of my favs when I'm in the "South of the Border" mood!

Ingredients

  • 1/2 cup high quality oil cold pressed olive, coconut or avocado
  • 3 Tablespoons Braggs Amino Acids or Coconut Aminos
  • 1/3 cup lime juice
  • 3 cloves garlic
  • 1 Tablespoon cumin
  • 1 Tablespoon chili powder
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon celtic sea salt or pink himalayan salt
  • 1/2 teaspoon white pepper
  • 1 Tablespoon raw honey or 100% organic maple syrup
  • 1-2 Tablespoons fresh cilantro

Instructions

  • Combine all in a high speed blender.
  • Store in refrigerator for up to one month.

Notes

Uses:
Salad dressing
Marinate chicken or steak for 30 minutes to over night to tenderize and add a flavor punch.
