Cool & Creamy Cucumber Sandwich
Cool, crisp and nutritious summer time sandwich.

Ingredients
- Fresh cucumbers
- Nitrite Free Turkey
- Organic or Homemade Cream Cheese with Herbs
- Thin sliced veggies or sprouts
Instructions
- Cut a long fresh crisp cucumber in half and scrape out the seeds with a spoon. I like to eat the seeds, they are great for your skin! You can peel it but the peel is good for you if it's organic and not waxed.
- Lay out 2 slices of thin sliced nitrite free turkey (or any other meat you like) and cut it the same length as your cucumber. Confession.. I eat the ends of the turkey too.
- Now spread about a tablespoon of herbed cream cheese (my homemade cream cheese is lactose free and full of beneficial probiotics). The herbs I use are great for digestion as well as being tasty.
- Top with your favorite thin sliced veggies (I used an orange pepper sliced on my mandolin).
- Roll the turkey tight and stuff it in to one half of the cucumber and then firmly but gently press the other cucumber on top.
- I cut my cucumber sandwich into slices, I think if you refrigerated first it would cut nicely but I couldn't wait.
