Eggplant Sandwich Gluten Free

The Green Goddess Sandwich in our book Wonderfully Well is one of my favorites of all time.  The dressing is savory with a punch of flavor, two inches of spinach give you the texture of meat and the thin layers of veggie blend their flavors well.  Stack it all on a sprouted grain bread….ERRRCHH….can’t do that any more; my body does not tolerate gluten At All!

I really miss having sandwiches,  I don’t like most gluten free breads and even if one does hit the spot, if I eat a gluten free bread product more than once or twice they begin to (excuse my honesty here) literally gag me.  Oh how I miss sandwiches!

photo-4Well, my good friend, business coach and client, Missy Day and I were talking about how to make the green goddess sandwich gluten free and somehow we landed on using Eggplant for the “bread”. Tonight I tired it for myself and my sister-in-law, Michelle and we both agree…it is the bomb! Michelle thought it was a bit messy and would be better so we tried them wrapped in a romaine lettuce leaf…stacked up like I describe but tucked neatly in the lettuce leaf was even better!

This is not a Cleanse-legal sandwich because the dressing uses yogurt and mayo, however, I am going to try to make the dressing vegan…I’ll let you know how it works out.

Eggplant Sandwich Gluten Free

This is a fabulous blend of flavors and textures and is the best "gluten free" sandwich I've ever had!

Ingredients

  • 1 large egg plant
  • Baby spinach
  • Thin sliced tomato onion, cucumbers, avocado (I also love sprouts on top)
  • 1 recipe Green Goddess Dressing

Instructions

  • Make the Green Goddess Dressing the night before so flavors blend well.
  • Cut the egg plant in to 1/4 to 1/2 inch slices, sprinkle both sides with salt and allow to sit for at least 30 minutes.
  • Rinse salt off eggplant and dry well.
  • Brown eggplant in Grapeseed oil on medium heat.
  • When eggplant is cooked, place on a platter or cutting board and build your sandwich.
  • Eggplant on the bottom ,then a splash of green goddess dressing, layer thin sliced veggies and 1-2 inches of spinach.
  • Top with another eggplant round and a dollop of green goddess dressing.
  • Enjoy!
