I’m so excited to share my new favorite treat – 2 Bite Salted Caramel Truffles?  I enjoy a treat of some type of chocolate truffle once a year at a special candy shop on the Oregon Coast and honestly I don’t even think about truffles, much less Salted Caramel Truffles, the rest of the year.

A Yummy Healthier Celebration Food

For treats I usually have Coconut Almond Fudge, Zucchini Chocolate Chip Muffins, and a few other treats…you can find the recipes on this website.  HOWEVER, when I realized I accidentally bought a jar of Maranatha Caramel Almond Butter instead of plain almond butter I wondered…could this be the beginning of a new treat and oh my gosh…it was good!  I just couldn’t wait to share it and believe me my next purchase of Maranatha Caramel Almond Butter WON’T be an accident.

So Simple to Make

One bite of the Caramel almond butter told me I had to cut the sweetness but I knew this was big time treat material.  It just so happened I was making homemade almond milk that day and so I wondered how it would work to add some of the almond pulp to the Caramel almond butter.

I plopped both in my Kitchen Aid using the paddle and mixed well.  Taste test heaven!  This is it!  A simple rolled truffle, dusted with Celtic Sea salt or raw cocoa.  Heaven in 5 minutes!

The mix was a little damp due to the wet almond pulp so I stuck it in the fridge for about 1/2 an hour and then rolled the bowls, dusted with Celtic sea salt and some with the raw cocoa, store in the fridge for a fun and yummy treat that I can have more than once a year!  And you can too….

The ingredients on the Caramel almond butter list organic powdered cane sugar…so it is super sweet already but listen, for a treat the amount of sugar in this is nothing!  1 Tablespoons of the plain Caramel almond butter has 6.5 gr of cane sugar and the sugar in the almonds combined.  That is about 1.5 teaspoons.  Get this homemade peanut butter fudge (which has a similar flavor to this recipe) has at least 1 pound of powdered refined sugar…1 pound!  Get the comparison?  Think 6.5 grams to 27 grams…1.5 teaspoons to almost 9 teaspoons.  You will not feel deprived with this super satisfying treat that also has beneficial fats from almonds and even a smidge of fiber from the ground almond pulp.

Don’t Tell Them It’s Healthy

I promise your friends and family will say these Truffles are the bomb…just don’t tell them they are low sugar and healthy!

These salty-sweet, decadent tasting treats are quick to make and will make you go mmmm.

Ingredients

  • 1 22 oz jar Maranatha Carmel Almond Butter
  • 1/2 cup ground almonds
  • 1 Tablespoon celtic sea salt
  • 1 Tablespoon Navitas Naturals Raw Cacao Powder
  • Navitas Naturals Raw Cacao Powder

Instructions

  • Grind almonds in your highspeed blender or use the pulp from homemade nut milk. You can also purchase ground almond meal but your Truffles may be a little drier.
  • Combine Maranatha Carmel Almond Butter and the ground almonds and mix well with a paddle mixer or by hand. Put in refrigerator to set up for about a half hour.
  • Form into 1 inch balls.
  • Sprinkle truffles with Celtic Sea salt or raw Cacao powder or roll in Raw Cacao Powder.
  • Store in freezer up to one month (if they last that long).
  • I used one cup of the pulp from my homemade almond milk. If you don’t want to make almond milk (you really should try), you can grind up ½ cup of soaked almonds and 2 medjool dates.

If you are going to grind up soaked almonds...cover 1/2 cup of almonds for 1-4 hours, drain water and grind in your high speed blender.
