Put oil in pan, turn on heat, put in earth balance or butter.
When butter is melted add popcorn and salt.
Shake pan or stir whirly pop continuously until it stops popping.
Lightly grease a baking sheet with coconut oil or butter.
Have a very large mixing bowl or tub ready to mix the concoction in.
Combine everything except the vanilla in a heavy sauce pan. Stirring constantly over medium heat, cook until it is about 245-250 degrees Fahrenheit. It will be creamy and caramel-looking.
Drizzle the sauce over the popcorn, stirring or mixing with some large greased tongs until well distributed and most of the popcorn is lightly covered.
Spread your Healthy Homemade Cracker Jacks out on the baking sheet and bake at 350 degrees for 5 minutes.
Remove from oven and cool.
Store in a sealed container.
